# Is Jaggery substitute for Sugar?
No. Jaggery also have high amount of sucrose, so it is not advisable to consume it as a replacement of sugar. Diabetic people might think to eat jaggery without fear but it’s not the wise decision.

What is the Process of Jaggery Preparation
Sugarcane are crushed to take out its juice.
Then juice is cleaned by using either cloth or fine mesh.
Boiling process is done at around 110 to 115 degree celsius. This is done for 2 to 3 hours. In this process impurities are removed. Organic and inorganic clarificatnts are the two types for clarifications.
Organic clarificants means, it is made from using vegetables, for example: sulkali, bendi etc.
Inorganic clarificatnts means usage of chemicals, this contains super phosphate, lime and hydrous power.
In boiling process, the scum gets forming above the juice. It is removed to get pure jaggery. Here solid liquid is transferred to different pots or boxes for getting the shape.
